The Purty Kitchen launches a new seasonal menu as Adam Brack-Sinnott takes the lead in the kitchen, bringing his international experience to the table.
With experience spanning Michelin Guide-listed resorts, top New Zealand restaurants, and esteemed Irish establishments, Adam Brack Sinnott has honed his craft in seasonality and sustainability. From leading kitchens at Muse and Yu Group in Wellington to learning fermentation and preservation techniques at Egmont St Eatery, his career has been defined by a love for local ingredients and a passion for creating a meal diners will remember.
Adam Brack-Sinnot, Head Chef, is excited about a new season and new menu, “at The Purty Kitchen, I want to create dishes that evoke nostalgia while embracing the incredible local produce Ireland has to offer. Sustainability is at the heart of my cooking, whether it’s foraging for unique ingredients, preserving traditions through pickling, or ensuring we use every part of an ingredient with respect. My goal is to craft a menu that honours the rich history of The Purty Kitchen while bringing something fresh, exciting, and truly memorable to the table”.
The new spring menu at The Purty Kitchen embraces Adam’s hyper-local ethos while keeping beloved favourites that simply can’t be left off. Partnering with local suppliers and using the freshest seasonal ingredients, this season’s menu features George’s Fish Shop haddock, Rick Higgins Butchers pork chops, Peter Caviston’s sourdough, and Kelly’s mussels.
This season, enjoy a creamy burrata paired with fresh spring courgettes, vibrant gremolata, and local herbs, served alongside Peter Caviston’s sourdough. Savour the delicate flavours of West Coast monkfish complemented by a local herb emulsion, Maris Piper potatoes, samphire, and crisp radish. Or indulge in pillowy potato gnocchi with velvety celeriac cream, roasted cauliflower, crunchy pangritata, and fragrant local herbs.
The new menu will launch this Thursday, March 27th. The Purty Kitchen is open for food on Wednesday and Thursday from 5 pm–9 pm, Friday and Saturday from 12 pm–9:30 pm, and Sunday from 12 pm–8 pm.
